Dihydrate comes in LR, BP, USP and food grade. Anhydrous comes in LR, USP and food grade. Open calcium sulphate dihydrate or calcium sulphate anhydrous. If you search the US spelling, calcium sulfate is the same product.
IP, BP and USP stand for the Indian, British and United States Pharmacopoeias. If the salt goes into a medicine, you need a pharma grade, and the monograph you work to decides which one. LR, AR and ACS are laboratory and reagent grades: laboratory reagent, analytical reagent and American Chemical Society. Food grade is for food processing. Injectable grades go into parenteral products, so the testing is stricter.
